My friend Elissa and I spent Friday and part of Saturday last week canning tomatoes. It was a lot of work, but it was so exciting to see the end result. I think between the two of us we ended up with 52 pints of salsa, 42 quarts of tomatoe soup, and around 50 pints of just plain ol' canned tomatoes! Here in a few months when the weather is below zero and there is tons of snow on the ground, I am going to pull this stuff out and be so excited!
